In Spain we also use "en B" or "bajo cuerda" to refer to undeclared money.
"Le cobraron el 20% del piso en negro / en B / bajo cuerda. No debería haber aceptado."
"Todo el dinero que no se declara es dinero negro"
"No cobro dinero negro / en B / bajo cuerda"
